Write p=K/N. Then E(X)=np and Var(X)=np(1-p)(N-n)/(N-1), for N>1. The last factor reduces variation relative to independent binomial draws. It is 0 when every unit is sampled. The denominator C(N,n) counts all equally likely samples; the numerator counts those with the required category composition.
